There is not enough freezer space to get all of Sonny Marie’s products on the shelf.  Sometimes it’s all about taking the family favorite recipes and converting them to Gluten Free.  Here are some of mine.  Feel free to send me yours and I will try them and get them converted and posted up for everyone to share.

Sonny Marie’s gluten free version of

Rita Heikenfeld’s Buttermilk Pancake Recipe

INGREDIENTS:

1 egg
1 cup buttermilk
1 teaspoon vanilla
½ cup rice flour (brown or white)
¼ cup potato starch
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon xanthan gum
½ teaspoon salt
Butter for griddle

DIRECTIONS:

  1. Mix egg, buttermilk and vanilla together.
  2. Mix dry ingredients together (be sure to mix well), then add dry mix to the egg mixture.
  3. Let sit a few minutes before cooking on a buttered griddle.

 

*TO MAKE DAIRY FREE

Replace buttermilk with: 1 teaspoon of apple cider vinegar mixed with 1 cup Rice Milk.  Replace butter with Earth Balance Buttery Spread

Not as fluffy but still taste great!
